Green Apple & Cantaloupe Fruit Salad with Chili-Lime Chicken Strips
writes, "Go green this month by making this green apple fruit salad with notes of bright lime juice and refreshing mint balanced by warm undertones of a ginger syrup. Make it a meal in 30 minutes or less by grilling up my chili-lime chicken strips to serve alongside. Good Luck to ya and remember this old Irish saying, "As you slide down the banister of life, may the splinters never point in the wrong direction."
Green Apple & Cantaloupe Fruit Salad with Lime & Mint Ginger Syrup
Prep time: 20 minutes
Serves 6

Ingredients:
8 cups spinach leaves, rinsed and dried
1 cantaloupe, fruit sliced in slivered chunks
3 large green apples, sliced thinly
1 package of strawberries, sliced
1 cup chopped pistachios
1 bundle of fresh mint leaves, stems and leaves separated
2 inch nub of fresh ginger root, peeled and sliced
3/4 cup water
1 1/2 cup sugar - I used evaporated cane juice, but granulated white sugar will work, too.
Juice from 1 lime

Directions:
Let's first start by making a ginger, mint simple syrup. In a sauce pot, combine water, sugar, ginger slices and mint stems; give them a good stir and bring the mixture to a boil over medium-high heat. Once it has come to a boil, reduce the heat to medium-low and simmer for five minutes or until the sugar is completely dissolved, stirring occasionally. After the sugar is dissolved, remove the pan from the heat and let the syrup steep for 20 minutes to cool down and allow the ginger and mint essences to release their flavors. In the meantime, wash, cut, slice and dice your remaining ingredients; add them to a beautiful bowl, give the fruit and spinach a nice squeeze of fresh lime juice for flavor of course, but to also prevent the apples from browning.

After the syrup has steeped for 20 minutes, strain out the ginger and mint stems, pour the ginger mint syrup into a sauciere or gravy boat, and it's ready to drizzle over the salad. Finish the salad with fresh mint leaves and pistachios for texture. Enjoy!

Grilled Chicken Slices in a Chili-Lime Marinade
Prep time: 2 hours to over night
Cook time: 10 minutes tops
Serves 6

Ingredients:
3 chicken breasts, sliced
1/3 cup grapeseed oil
3 Tablespoons lime juice
1 1/2 Tablespoons ground cumin
1 1/2 Tablespoons chili powder
1 Tablespoon minced garlic

In a zip top bag mix together the ingredients above with the chicken slices, place in the refrigerator to marinade anywhere from 2 hours to overnight. When ready to eat, fire up the grill and give it a go! Grill the chicken until it is cooked through to 165 degrees. Serve with ginger lime fruit salad. Yum.
