Healthy Frozen Banana Treat
writes, "In case you missed it, yesterday was National Ice Cream Day. Something about hot, summer weather and ice cream just naturally goes together! If you want to avoid the added sugar, I have a secret way to make a creamy, soft serve treat that is so healthy; you can serve it to your kids for breakfast!"
Banana "Ice Cream"

One medium banana has about 105 calories and is loaded with potassium and vitamins. All you need to make this ice cream is a food processor and chunks of frozen bananas. When processed, the frozen bananas transform into a wonderfully sweet ice cream alternative that is dairy and refined sugar free.

You do need to plan ahead for this, however, as you will need frozen bananas! This recipe is perfect for those overripe bananas that turn brown before you get a chance to eat them. Slice 2-4 ripe bananas and place them in the freezer overnight. Before preparing the ice cream, take the bananas out and let them sit on the counter for a few minutes. Each banana makes 1/2 c. of "ice cream."

Place the banana slices into the food processor. You can stop there with just one ingredient and blend them to a creamy consistency. You may have to scrape down the sides a few times or possibly add a tablespoon of liquid. However, I like to flavor it up a bit by adding a tablespoon or two of nut butter (almond, peanut butter, sunflower seed) and a tablespoon of honey. I like to blend in some rolled oats as well when serving for breakfast with some crunchy brown rice cereal or sliced almonds on top.

You wouldn't think bananas could turn into something that resembles ice cream, but amazingly enough when blended they turn into a creamy, custard-like treat. The best part is playing around with the flavors and mixing things up. If you are not a banana fan, you can add cocoa powder for chocolate ice cream or try frozen strawberries, mangoes or peaches and a dash of cinnamon. The bananas make a nice base for a variety of flavors.

So next time you hear the ice cream truck music in the distance, just let it drive on by, and in just a few minutes you can create your own frozen treat to satisfy that craving for something cool and sweet!
