California Chicken Fajitas with Chipotle Spiked Sour Cream |
ckelson writes, "Whenever I visit California I love how fresh the ingredients are and how effortlessly they seem to come together. The flavors in these California inspired fajitas are smoky, fresh and bright due to the citrus marinade for the chicken, the use of cumin, coriander and chipotle as our fragrant spices and layering with cilantro, cabbage and avocados for a beautiful, green, fresh finish."

Chili-Lime Shrimp with Jade Pearl Rice |
ckelson writes, "As a child in Arizona we had oranges, lemons, limes, and grapefruit everywhere, so it should come as no surprise that I am excited to make any recipe that involves fresh citrus. March is the month that citrus blossoms bloom and I cannot get enough of that sweet aroma. So this month is dedicated to all things citrus. For this recipe, shrimp is combined with spicy Sriracha sauce and balanced with a sweet and sour chili-lime sauce along with a new rice called Jade pearl rice. It cooks to the color of green with a light vanilla taste and is exploding with health-giving nutrients. This quick and easy dinner is tart, tangy, sweet and spicy, enjoy!"

Green Apple & Cantaloupe Fruit Salad with Chili-Lime Chicken Strips |
ckelson writes, "Go green this month by making this green apple fruit salad with notes of bright lime juice and refreshing mint balanced by warm undertones of a ginger syrup. Make it a meal in 30 minutes or less by grilling up my chili-lime chicken strips to serve alongside. Good Luck to ya and remember this old Irish saying, "As you slide down the banister of life, may the splinters never point in the wrong direction."

Spicy Tuscan Tortellini Soup with Sea Salt Focaccia |
ckelson writes, "Like the envelopes of love letters sent to the cherished people in your life, this month of loveliness comes to a close. End it with an unpretentious, robust soup that will make you feel, at least for one romantic night, you have died and dined in Tuscany, Italy. This soup blends the warm notes of bell peppers, Serrano pepper, garlic and fennel, with an innocent, fresh white wine and tomato broth. The finishing touches bring it to life with a burst of flavor, aroma and saltiness from sassy lemon, delightful basil and seductive parmesan. Mio amore!"

Citrus and Fennel Sole with Roasted Sweet Potato Hash and Fresh Watercress Salad |
ckelson writes, "It is the month of love, so spice up your regular dinner fare with this fancy presentation of citrus, fennel sole and sweet potatoes with a delicate salad cascading on top. Your family will think they are in an elegant restaurant so add to the theme by tossing aside the paper plates and water and replacing them with fancy china and goblets filled with sparkling apple cider. This dish comes together quickly once it is prepped; the flavors are bright, warm and mouthwateringly savory. Enjoy the swank!"

Citrus Chicken Lettuce Wraps |
ckelson writes, "The dinner this week was inspired by Valentine's Day on Tuesday; and what better way to say I love you than homemade fortune cookies and a heart-healthy meal? You can serve these sweet and savory Citrus Chicken Lettuce Wraps with a new ingredient I found at Winco. It's been dubbed the new super food with more antioxidants than blueberries cup for cup. It's called forbidden black rice. The Chinese elite would hoard this rice and refuse to portion it to the common folks due to its health giving properties. It's subtly nutty like brown rice, cooks to a beautiful deep purple and has a great bite; it was a great addition to the lettuce wraps. Finally, tell your family how much you love them by writing it on a fortune inside a fortune cookie that you make in your very own kitchen! Have fun with this one and Happy Valentine's Day!"
