Orange-Cranberry Tomato Soup
writes, "I had a great time this week bringing a fresh holiday twist to the classic tomato soup. The addition of cranberries, orange juice, and red pepper flakes intensifies the tomato base, creating a bewitching, but compatible and irresistible heated, toothsome twang after each swill; swaying your taste buds to beckon for more. "
Serves: 6- 8 adults
Prep time: 10 minutes
Cook time: 30 minutes

Ingredients:
1 Tablespoon olive oil + 1 Tablespoon butter
1 medium onion, diced
1/2 cup celery, chopped
1 1/2 cup whole cranberries
4 cloves garlic, minced
1 cup fresh basil leaves, loosely chopped
1/4 teaspoon red pepper flakes
2/3 cup orange juice
1 - 28oz. can of diced tomatoes
4 cups chicken stock, heated
2 cups water, heated
Salt to taste
2-3 teaspoons of sugar- to taste
3-4 large fresh basil leaves, chiffonade - roll basil in cigar shape and slice into thin ribbons

Directions:
Heat oil and butter in a soup pot over medium heat, add onions and celery, cook until softened; about 6-8 minutes. Add cranberries and cook for 5-8 minutes more until most of the cranberries have burst. Add garlic, fresh basil leaves and red pepper flakes to the pot to cook for 1 minute more. Next, add the orange juice, cook until most of the juices have been absorbed by the vegetables; stir constantly to avoid burning the sugars. Finally, add the can of tomatoes, chicken stock and water. Bring the soup to a boil for a few minutes then turn down the heat to medium-low and simmer for 20 -25 minutes.

After simmering, puree the soup by using an immersion blender or use a regular blender, pureeing in batches until the soup reaches the desired consistency. If you would like to have a glass-smooth soup, strain through a fine mesh strainer at this point. Return soup to the pot and adjust seasonings by tasting it to determine how much salt and/or sugar should be added to achieve the desired flavor. I added 2 teaspoons of sugar to round out the tartness of the cranberries and about 1 1/2 teaspoons of salt to bring all the other essences of the soup to the forefront. Serve with fresh ribbons of basil on top, your favorite crackers or a delicious grilled cheese sandwich like a brie, basil and cranberry grilled cheese.
