Crunchy Broccoli Salad
writes, "I am always in need of a great salad either to serve as a side dish, or good enough to play a starring role at dinner time. When I tasted this salad at the Boise Co-op I knew I needed to have it in my repertoire of go-to salads. In my version of this crunchy broccoli salad, I used the left over bacon fat as the oil for the dressing and combined a pre-made coleslaw dressing with half and half to create an easy, tasty salad dressing that is ready in minutes. This salad can also be made a few hours in advance and stored in the fridge as the flavors marry together; just wait to add the almonds and bacon until ready to serve so they retain their snappy crunch. "
Crunchy Broccoli Salad
Prep time: 15 minutes
Pull it all together time: 5 minutes
Serves 4-6 adults

Ingredients:
3 heads of broccoli, crowns separated
1/2 to 3/4 red onion, thinly sliced
1 cup sliced almonds
1 cup dried cranberries
1 lb. bacon, cooked and break into small bites - reserve the bacon fat, set aside to cool

Dressing: Makes 1 cup
1/2 cup Hidden Valley coleslaw dressing, (at Winco)
1/2 cup half and half
2 Tablespoons sugar
3 Tablespoons red wine vinegar
1/2 teaspoon celery salt or kosher salt
1/4 teaspoon dry mustard
1/4 teaspoon black pepper
4 Tablespoons reserved bacon fat

Directions:
In a frying pan over medium heat cook bacon until crispy, break into small bites and reserve the bacon fat for the dressing. Prepare the broccoli and red onion for the salad, gather the almonds and cranberries. Prepare the dressing by adding all the ingredients into a blender to mix, (the bacon fat will be the last ingredient added to the dressing; make sure it is luke-warmish, not piping hot).

Place all the ingredients into a large bowl. Pour the dressing over the salad and mix well together - I like to use a large stainless steel one to mix my salad first so the real salad bowl stays pretty and presentable, not smeared with dressing; then I grab my favorite salad bowl and pour the pre-mixed salad in for a beautiful, clean presentation.
